Roasted Rack of Lamb with Salsa Morita
Roasted lamb ribs with a sauce that combines the earthy and spicy Salsa Morita, the comforting sweetness of agave honey, and the satisfying crunch of pistachios.

INGREDIENTS:
800 Gr Rack of Lamb
250 Gr Pistachios
250 mL Salsa Morita
3 Spoons of Pasilla Oil
2 Spoons of Agave Honey
INSTRUCTIONS
- First, heat up the pan and add the Pasilla oil.
- Roast each side of the lamb until the skin is crispy and golden.
- Put the whole container of the Salsa Morita in the blender, along with two spoons of Agave honey.
- Then cover the lamb, use only half of the previous mix.
- Preheat the oven to 145 F and base for nine minutes.
- You can use the remaining portion of the mixture to cover the lamb.
- Sprinkle a generous amount of ground pistachios.
- Slice and serve with baked potatoes or fresh vegetable salad.
