Pollo Pibil is a classic meal from the Yucatan peninsula. The main ingredient in this dish is Achiote paste, also known as "Recado Rojo," an essential ingredient of many dishes in Yucatecan Cuisine. Our recipe includes chicken marinated with Achiote seeds and citrus juice, wrapped in banana leaves, and slow-roasted for a deep, rich flavour.
